Sweet Roasted Garlic Tomatoes

Recently I have become very addicted to tomatoes. Whether it is pico de gallo, a margarita pizza, or just the simple act of throwing a slice of tomato on a burger, I keep searching for that fresh, sweet flavor of the red wonder fruit. While these are all completely normal things for people to enjoy on a regular basis, I grew up a very plain kid. I still have quite a few things that I won't add condiments to, but fresh ingredients are now always welcome on my plate.

When halibut was the main dish for dinner the other night, it was important to add a boost of flavor and excitement to the meal. So, taking count of all the ingredients I had on hand, this is what I came up with: a very simple yet delicious roasted tomato side dish. I love taking recipes and tweaking them, so if you are joining in making this, feel free to add ingredients that you love. (Also, I tend to cook salt free as I have someone in my family who needs to limit sodium. I happen to think everything tastes good without the salt, but add as you see necessary.)
I loved the sweetness of this dish. The combination of tomato, onion, garlic, olive oil, and balsamic glaze was absolutely perfect. Between the mouth feel and the popping cherry tomatoes, it was the best balance of refreshing, juicy, and warm. Especially as the summer is approaching, this is a welcome trade off for some of the heartier, carb heavy side dishes.
